So in a double wide, there's a split vertically down the wall where the 2 trailers come together. Can it be covered with a single sheet of drywall, or is it better to put a piece of drywall on each side of the split and then cover the split with something? I tried searching, but I'm not sure what the split is actually called :D

Its called a marriage line. No problem covering it with a panel of sheetrock, if they need to move the house and split it back apart, they'll just cut through it.

Ok great.. I wasn't sure if that was a weak point in regards to the place shifting or settling
