My new gas valve calls for incoming 5lb min and 7lbs max,
the gas company has mine set at 7.5lbs will this hurt anything?
Also what causes the pilot to go out?

Incoming gas pressure
Gas Pressure differ depending on fuel type. They should be within unit ratings.
Pilot outages can be thermocouple, dirty pilot burner/orifice, dirty pilot tubing, gas valve, gas pressures, roof-jack problems due to damage, missing parts or misalignment.
Those are most common.
Also, gas pressures are measured in inches water column, not pounds.
