Not sure about this, but it seems to me like you would have more condensation problems that way. Lath insulation and metal would still be able to breathe some. Foam board method, done properly, would act as a barrier. Ply would (ha ha ply would) gas off moisture and it would be stuck.

I don't see why they would not work. Might not look great, but should do the job it is intended for. The hard part will be creating the new trim for the top of the panels. All corrugated panels will have ribs standing off from the wall. You will have to fashion some type of "Z" bar to stop...

All the home store in my are sell pre-hung doors made for 2x4 walls. I would just install that and then put the door casing on the outside lip on one side. Both edges should be straight enough to fit nice. After painting, you would hardly know it.

Pictures of the repair would help a lot with a more accurate answer. A repair done wrong might not last through the next rain. A repair done right could outlast the rest of your roof. No way to know without seeing it.
