Again, I have a rental with a slight problem. When the weather gets colder, I guess the door shrinks and will not catch. Should I move the catch out further or work with the hinges or what?

You might try taking off a piece of trim and pounding a couple shims. That should draw the jam closer to the door if there's not too many screws or nails to contend with.

Otherwise I would probably just move the latch out if everything is still lined-up.

I had a problem similar to yours in the summer plus the door was sticking this winter . Its the worst in the winter so what I did was I went to my local lock shop and shelled out "gasp" $16 bucks for an oversized striker plate. took a hole cutter and chisel and went to work on it. lol. closes like a dream now.
