Are you using a rectangle plastic box in the wall for the plates to screw to? A keyhole saw works great in drywall. They are 5-10 bucks at the store. You can find them in the drywall section. Otherwise there are a bunch of power tools that will get the job done. Rotozip, dremel, oscillating multi tool, etc.

I vote for an oscillating multi tool, around $ 20.00 harbor freight to $100 plus elsewhere , less mess easier to control .
I bought this thing from Harbor Freight:

It gets the job done, but is very messy and doesn't cut very straight unless you put some muscle into keeping it under control. You end up with drywall dust everywhere .. it got to the point where my g/f would run the shop vac and hold the hose a few inches away from where I was cutting.
I found it much easier just to use a drywall saw:

This makes nice clean cuts in drywall, little mess, easy to control, plus has many other uses.

Cutting blind holes in an existing wall could be dangerous , unless you know for sure there are no wires behind the wall. The stroke needed on a drywall saw could be a problem. H.F currently has the oscillating multi tool on sale for about $16.00. The depth of the cut is controllable, the other plus it has many more uses.
