How could I do this, the tub and faucet installation I have down, but what do I do with the shower head part?

You will need to open up the wall and remove the shower arm & plumbing. Greg

oh ok, would all the pipes coming up to the shower arm have to come out, or could I cap them somehow?

Depending on the faucet, most run hot & cold to the faucet and use either a pull up or turn type diverter valve to activate the shower. If you have the type that pulls up at the end of the spout than you should be albe to just disconnet and plug the line going to the shower head. Greg
