Pig Roast

Around Christmas we roast the pig and have all the friends and relatives over. This year the pig was 168 lbs. cleaned. There are many ways to roast a pig. We do ours like the Cuban method. No hole in the ground. We stack 48 concrete blocks. The pig gets marinated overnight then wiring into the pig turner/flipper. It takes 2 people to flip the pig from time to time. Cooking time is approx 10 hours. A good time was had by all.

LOL, you two need to stop that right now !!

I've drooled all over myself after looking at Harry's pics and now JD, you sweeten it up even more.

I can't get nothing done for feeling hungry all the time,LOL.

I tell ya what Harry, if we ever get this group together, you better have a trailer to haul them blocks on.

I smell a smoked and BarBQued oinker in the near future sho nuff !!

No need to worry about gaining weight, I'll lose it chasing that dang bug around Harry's avatar,LOL.

If I ever catch him, he's a squashed critter. ~snicker~ :P

Hi Harry,

Nice cooker...LOL, when do we all show up. Seems the main menu is planned, I got the dessert...strawberry shortcake! Just picked the berries.

As for that bug Robert, I believe I sent several folks a joke with that bug in it, seems Harry transformed him to an avatar...will never send him another bug!

Pig Roast Menu

- Baked sweet potatoes w/ dark brown sugar and butter sauce
- Bush’s baked beans with extra ham, bacon and molasses
- Yellow tater salad w/lots of boiled eggs
- Deviled eggs
- Black beans and rice
- Mariquitas (Plantain chips with mojo sauce)
- Coleslaw
- Corn on cob boiled and roasted
- Collards and ham hock
- Chips and smoked mullet dip

You could at least send me a bib, I look worse than a St. Bernard!!

Folks watching their blood sugar will have to take it easy on the:

- Sweet potato pie w/Cool Whip
- Pecan pie w/vanilla ice cream
- Rum cake
- Beer and wine coolers
