Does anyone know how this type of ceiling comes if in panels or sheets? and to repair or replace them do I remove the wider strips? is that what is holding this ceiling up is it still available?
or should I replace all with drywall?

JD had a company that supplied a few types, but I think the shipping costs alone would kill the budget if you were lucky enough to find the style.

I would just hang 3/8" sheetrock. You could mix some thin joint compound and brush it on to give a textured look.
