I would install a Kohler cast-iron tub with a Moen tub shower valve.
Then install a man made material on the walls such as Marbleque.
Of course you would need to install 3/8 plywood on walls before the man made wall finish goes on.
Post picture when done.

You will want a direct connect vent and direct connect combustion air .
It does not need to be MFG home approved as long as it meets the two above items.

Window should of been caulked at top,sides and bottom between window and trim.
Allowing water in at the above locations will hold water in contact with trim and siding and eventually rot out siding and trim.

One comment. When you pull the wood stove pipe support box from the ceiling you will see that they cut the rafter in half . Make a close inspection for any evidence of sagging. I should have added use smooth wall rigid. Corrugated flex pipe creates more turbulence and traps more grease in each of the folds.

What you are experiencing is something all will realize regarding micro range hood versus just a simple range hood. Micro range hoods have a lot more nooks and cranny's that trap grease and other particulates that are air born. They are not as efficient of removing grease laden air as a straight ran...

I would go with the metal roofing, foam board and 1 X strips.
I would worry that the cabana style free standing metal roof would catch the wind and blow off. Plus damage your home in the process

I should add to thoroughly paint belly band before installing, front,back,bottom and butt joints and area to be installed over, preferably two coats on all areas before install.

Replace belly band with HARD Plank or use T 1 11 again, but before installing run bead of high quality caulk (such as Valkum) at top edge on the back side of belly band you are re installing so it squishes out the top and then come back and run another bead across the top after installation.
