Like Greg said you need ventilation. The insulation can not touch the bottom of the roof anywhere. Depending on your setup will depend on the best method to vent it. What kind of box is there now? The light fixture should attach right to the box, so you shouldn't need moly bolts. I have used the Oatey All Purpose Glue in similar conditions such as yours. I kept it inside and then used it ASAP and hit the joints with a heat lamp for a few minutes. Since you state that it only happens in winter I would be leaning towards something freezing. Summer is fine, but last winter and this winter you have issues. When you did the roof would have been the perfect time to inspect the attic. Could have even pulled off a whole piece of sheathing to get a good look and replaced for a couple bucks. Another consideration is how the insulation is installed. What kind of insulation is it? Are there any spots that the insulation is touching the bottom of the roof? You need an air gap between the insulation and roof. There are lots of things that can cause moisture. How about your bath fan venting?...
