I think your steamed window problem is the cheapy windows. If your budget will allow, replace with better quality ones. In the meantime, seal up what you have as necessary to keep the cold air out, and the warmer air in.

Any energy efficient window is a improvement over the originals. You will save on heating bills in the future, have a less drafty house, and in some areas might even qualify for a small tax break. Go for it if your budget will allow.

If the bay window is that big, Id say it most likely is three windows built into a "bay" structure. One of my neighbors replaced the wide part of his bay window with two smaller windows, with a piece of wood/vinyl trim in the middle, so the bay has four windows instead of three. It allowed...

If youre getting mushrooms under the home where the dishwasher is located, is it possible that you have a leak(or a former leak) from somewhere in that area, keeping it damp under there???

Many bay windows are three individual windows setup to look like a bay to save money and weight. Pull off the trim and have a look.

The repairs youve posted about sound just fine to me. Replacing rotten wood can only help the structure of the home. Very important to make sure the home is level, though. I did see the PEX crimp starter kit on pexsupply.com, which looks like a good deal to me. PEX tubing, crimp rings, fittings, and the crimp tool for $340. Probably more than enough tubing and parts to replumb most mobile homes out there. I might look into that if need be, while on the lookout for a b...

I do like the fact that I have some experience with the crimp style. If I could use the Flair-It Pro, Watts, or snakebite fittings and get a GUARANTEED leak-free fit, Id consider using them. The Flair-it Pro looks so easy to put together, almost too easy.
