Seeings as it is probably too late for suggestions, I will say I hope the repairs work out well for you. As a 30 year, working professional in mobile home repair, I would say that the price sounds fair if they do enough work to fix the problem for you.

In 70's and earlier mobile homes, it is common to find plumbing, usually polybutylene PB pipe right against the bottom of the particle board subfloor. I would use a a little of Rick's and Greg's suggestions. When possible, I will connect cabinets together before lifting the up. Use a "T" brace to help support the weight. If these wall cabinets are going up to the ceiling, You could direct screws upward at the very top/back of the cabinet...

Replacing the turbine vents with these powered vents might take care of the problem.
