Kind of hard to say without seeing it, but I would think the patch material should survive a small amount of rain. The Okalux ceiling panels from Canada are no longer available in my area. You may find them in other regions, but marketing and distribution has been a problem for them. I would reinforce trusses and use 1/2" gypboard and texture.

I roll paint on liberally and back brush it. You get better coverage and adhesion this way. You are also able to ensure that you get enough paint in the grooves. You can also take a sample of your trim to a hvac duct company. They can do a great job of replacing it. Even wood grain embossed aluminum is available. It would be a lot cheaper to forgo the design work and make something plain and flat that would work as Z-bar trim.

In a 2005 home, I would think almost all of your wiring is in the wall. Usually all you would see is where the wiring goes up into the main breaker box, at the crossover connection and maybe added circuits.
