My concern is supporting the weight of the new roof on 2x4 wall studs. I don't know your location so I don't know if snow load is a factor. You need to figure out what you are starting with for studs first. If you have 2x6 wall studs than I think by adding parameter blocking the weight issue may be minimal. I went with a full 12" soffit when I did ours, make it simple and minimise waste. You may be able to drop to 3/8 OSB and save ...

If you are going with full size gutters, you can take a pair of tin snips and cut the small gutter in half length way (just be careful the edge WILL be sharp) that way water will just run directly into the new gutters.

The dryer vent needs to be run out through the skirting. Never just vent under the home, you will create a moisture problem.
By code, bathrooms must be vented however opening windows count as ventilation. You can add ceiling/ wall fan ventilation but it will require electrical work.

Most slip the full size gutter behind the factory "gutters" and just use the screw & spacer through the top of the gutter to hang them.

Can you post a picture? Often you can cut it down and glue the overlap edge.

I don't know of any "laws" that would forbid their removal, but I would check with your building codes officer. You will most likely need a permit for the work so I would run it by him.

I have never seen a frame like that. You could check Ebay for hinges or possibly make a conventional hinge work.
