Install electricity for a couple low wattage bulbs, and cover the opening with a translucent or stained glass panel for an accent light or night light.

For a gas unit, you MUST use a mobile home approved model which will be more expensive than a standard unit because the combustion chamber is sealed. The most difficult part is matching the corner angles. Practice with some scrap pieces to get it right.
Paintable caulk hides a lot of sins.

Since the roofer caused the damage, he should fix it. If he is strictly a roofer, he should find a drywall guy to patch it up.

I have the standard mobile home outlets inside, and have (yet) no problems; --BUT-- when my interior GFI outlets quit, I found a back stabbed wire pulled out of the standard outlet outside. I replaced the outlet and used the screws for the new connection.

First thing that comes to mind is water damage, particularly in the floors. Double pane windows. Being in Arizona, you will appreciate a light colored roof and exterior to reduce heat gain, since there is no attic to handle the heat. Most newer homes, maybe mid '80's up, will have 2x6 exterior walls...

Where does the line enter the belly? To be sure you get everything off with one valve, you'd likely have to catch it near that point, before it T's off anywhere.

Just one. The p trap will be attached right before the drain from the sinks goes into the main drain line.

The sheet vinyl in our kitchen needed replacement, but it was glued down. The installer put underlayment over it,because the surface would have been too rough with the glue residue. It wouldn't hurt to leave it in place under the c-walls.
