Yes, a bubble level will be enough to check whether your floor is slanted or not, as long as you run it all accross the length of the mobile home and accross its width as well (because it may be slanted in another direction); I've recently spent no less than three weeks doing that kind of things all...

Yes, Home Depot and other DIY/home works shop clerks are not necessarily knowledgeable about what they're selling... And even if they are, you may well be asking about paints while the employee is the store's plumbing expert. So, I'd second Greg's advice and go ask in a specialised paint shop.

Can't it simply be painted if you don't like the big blocks of solid colors? Or can something else be put over it?

I've used silicone caulk in many places, and if it's applied well (which isn't that hard to achieve by oneself), then it'll hold for a while; plus, in the case of a mobile home, the extra elasticity when compared to other caulking materials is welcome.
