Most of these CPVC or vinyl flat roofing materials are similiar. It'd probably be just fine with any brand. It's expensive from many flat roof installers but is stupidly simple to install.

I like the countertops. I was planning on doing that when I get to gutting the kitchen. Menards has cheap 2x that's deep enough for countertops and cabinets. I'd like to see more photos. It looks similar to our home. But we have never determined the age. Is your roof original? Perhaps our place did originally have solid trusses.

That is galvanized ducting that was added at some point. The ceiling is pretty much a steel chassis and joists. I removed the drop ceiling and vapor barrier. No vapor barrier or drop ceiling here. If you want to use a decent paint and you own a sprayer, I typically HVLP Rustoleum sold in the quarts. It looks phenomenal if done right as a cheap paint job on cars. I am curious to see what it would look like in gloss ona mobile home. I could probably show you examples.

This is what it looks behind the siding with 1x2/2x2 walls. Minus the faced insulation and wall paneling. Pretty scary.

A wood box sounds good to me. I'd use plywood with cheap 1x2 furring for framing, spray foam around the inside, stuff it with fiberglass batting, and mount if over the unit with a removable lid.
