If you are only sealing the bottom 3 feet the wood will still be able to dry out, if you were encapsulated the entire post that would be a different story. Change the ignitor! It has a flame sensor built in to the tip.....these some times fail.

Being that you have a gas water heater in a MH it is most likely a sealed combustion tank. (if its not it should be especially if its in an inside closet) Underneath the tank is a air vent that is cut into the floor to draw combustion air from under the home. Philips closed its window and door plants last June. If you contact a bunch of MH supply strores you may get lucky. Better option would be to just upgrade the door.

The product we typically used is recommended for 2/12 and greater. I have been using it on domed roods for years with out any trouble. make sure you get a panel with a low profile rib. If you are purchasing "solid wood" doors as you mentioned why not just trim 1" off the bottom. Then it will have the same gap as it did before.

To the OP. JD is on the money with the Polyiso foam. If its in the budget for the better foam then get it. Easier to work with as it is stiffer and will give you an extra point or two on R value. Look through this thread. Domed roof like yours. Drip edge on the perimeter furing strip. True 1x material was used along with 1" foam. 3" of overhang past the drip edge was added. No gutter was used.

Cut out 95 Cut in 115 ( you could adjust this to 120 but no more) Limit 190 To adjust settings turn off power.
