The problem as I see it is you have, in your own mind, decided you want to do this. You have come here for advice but really are looking for confirmation that it is a good idea. It's a bad idea. Renovating a home worth nothing is a waste of time money and effort with a negative return down the road....

I use the laminate as an upscale product appearance wise. I would use hardwood but unfortunately the value of the homes does not warrant the additional expense when flipping mobiles.

In cold climates insulated skirting insures that the area under your home will not freeze and actually makes your floors feel warmer. Radiant heat is captured under the home rather than escaping through the skirting vents. This results in lower heating costs.

Squeaking is caused by loose floor boards and is not a safety issue. If you have a prospective buyer coming sprinkle some baby powder in the area of the squeak and work it in. With luck it will stop the squeak.

I am not personally aware of the device. I operate my cottage off of solar and would not heat or cool with solar power. Propane stoves and refrigerator are the best options and are always usable regardless of the availability of battery power.

For mobiles I use sheet vinyl in the kitchen and bath, laminate in the living room and hall, carpet in the bedroom.

I strongly advise against using pink insulation. It is not water proof and when it gets wet it loses all its insulating value. Use Roxul green insulation. If you are not using water and the pump is cycling you either have a leak or the foot valve down your well is not functioning properly. They tend to get sand in them and jam open.

Roofing material can be used however if you do not replace a entire side you will need to paint both the old and new siding to get a proper matched finish.
The desired appearance of the finished product will depend on the standards of the community you are in.

I bury the plastic down along the back of the skirting. This allowes any water that might collect under the home, from say a water line leak, to drain out from under the home rather than creating a swimming pool..

I would suspect it is the fixture that is defective.
To test reverse the hot and cold lines to the tap and see where the low pressure problem is.

I can not see how your house not being square would affect the overhang other than at a peaked end wall. The distance from the ridge to the outer edge of the eve would not change with a shifting of the house, even a partial collapse of the peek of roof, therefore unless the roof itself was initially...
