I live in a 14 x 70 mobile home. The previous owner put in new windows although the mobile home had shifted. I was thinking of having it leveled but people have told me that since the home had windows put in when it was shifted that after leveling it the windows might not open and close anymore. Can this be true? My buddy said to put blocks under there and keep it from further sinking and then fix a couple floors. What would you do?

It is possible. I would use a water level and see how far off it is now, write down the current readings you can always go back to them. I like to take soapstone and write down the readings at the pier on the frame as well as drawing a map of the pier locations & elevation readings. It is easier to look at the map and see what has to go up and what needs to go down.
You may need to "split the difference" between level and where you are now to make things work.
