Make sure you prime first, then you can use what ever paint you want. I would recommend Zinsser 1-2-3, it has very good adhesion and hide so whatever pattern is on the paneling will not show through your top coat.
As for color, IMO beige and off white's always just look smoke stained and old to me.

Toughest part of removing mine was where they has screwed down the pump platform..., other than that it was a piece of cake, luckily I had a 30in. door on one side of the bathroom and to boot i actually sold mine on craigslist for some extra cash!!

Your better off grabbing a gallon of rust-oleum and brushing it on. You will get a better coat and it will be cheaper in the long run. A rattle can will over cover a 3 x 5 area, those $4 cans add up. Do a little more work now and you can enjoy it for a long time.

These overhead cabinets were solid oak!
