You cannot level a mobile home accurately with a carpenters level. you can get a bubble to center and not move when you raise it 1/16 - 1/8". Carry this line over an 80' span and you will be at least an inch off over the span. Water level is the only way to do it with accuracy.

As long as you can make accurate cut with a sawsall you should be fine. I cut the staples with wire cutters. My guess is that it is more of an overlap panel that does not fit right. If you are residing I would go with plywood with a z flashing to keep any water from getting behind it and just side over it.

It's all about ventilation. Some homes don't have any vents at all. If they are there I would try to maintain them to some degree under the new roof.

You could do an overlapping repair with no problem. as far as getting the old one out, just slice & dice till it's out.
You can glue & screw the new sections in place, that is where overlapping may make it easier.

No, but I question in my mind if you COULD do the whole porch and hide the difference between the pitch of the dormer & porch by adding a gable end on the porch roof. you would need to keep the same ridge line as the dormer. You may also be able to tie the roof line into the other roof line also...

That's the way to do it, use pressure treated to help keep the new from rotting.

Obviously you will need to extend the plumbing vents through the new roof. If you are planning on adding a slight peak you can leave the mushroom vents and vent through the ridge. You can also add a soffit and vent through that.

I was thinking that if you changed the roof pitch to cover the porch, you may be able to add a gable to the front of the new roof and hide the original roof lines of the dormer.

I think I would go with below frost line piers for support.
As for the roof I think you are almost going to have to continue the ridge line of the dormer, but if you are going to try to cover the whole porch you will have to change the pitch.
